CARAMEL CUSTARD Y2 cup sugar 1 pint hot milk 3 eggs 3 tablespoons sugar Vanilla Salt Caramelize the sugar by putting it into a pan over a slow fire and stir con- stantly until a rich brown. Spread on the inside of a baking dish, and set aside to cool. Mix the milk, beaten eggs, 3 tablespoons sugar, vanilla and salt. Pour into baking dish, set in water, and bake slowly until firm. CARROT PUDDING 1 cup suet (fine) : 1 cup sugar 1 cup grated raw potatoes 1 cup seeded raisins 1 cup grated raw carrots 2 eggs 1% cups flour 2 teaspoons cinnamon 1 teaspoon soda Vanilla, lemon 1 teaspoon nutmeg Mix and put into well oiled mold and steam for 3 hours. CARAMEL SAUCE: Brown slowly 1 cup granulated sugar in saucepan; when clear, add 12 cups boiling water, butter size of a walnut, salt; thicken with corn starch. STEAMED CHOCOLATE PUDDING Y cup butter 2 eggs, separated 1 cup sugar 2 cups flour Y% cup milk 2 teaspoons baking powder 2 squares chocolate 1 teaspoon vanilla Cream butter and sugar; add milk and eggs (yolks) beaten together; add flour, vanilla, baking powder and whites beaten stiff. Lastly chocolate which has been melted with 4% cup water. Steam 2 hours, SAUCE: 1 well beaten egg, 2 tablespoons melted butter, 1 cup powdered sugar, 1 cup cream, whipped. Flavor with brandy or vanilla. Beat egg whole; then beat in the melted butter, then sugar. Set aside to cool. Just before serving, beat in the whipped cream and add flavoring. LEMON PUDDING 2 eggs 1 tablespoon flour 1 cup sugar 1 cup milk Juice and rind of 1 lemon Salt Mix egg yolks, flour, salt, sugar, milk and lemon. Add stiffly beaten whites, folded in. Cook 30 minutes in slow oven in pan of warm water. Serve hot with cream.
