YEAST BREADS ; 29 Dissolve the yeast and molasses in the lukewarm liquid. Add the shortening; add the all-purpose flour, cup by cup. Beat until smooth; add the salt and whole wheat flour. This dough should be stiff enough to handle without sticking. Turn on a floured board; knead until smooth and elastic. Place in an oiled bowl; cover and let rise until light (about 11% hours) in a warm place. Punch down to release gas bubbles; mould in loaves; place each loaf in an oiled pan 9” x 5” x 3”. Cover and let rise until double in bulk (about 1 hour). Bake in a 400°F. oven for 15 minutes; reduce heat to 375°F., and continue baking 35-45 minutes. Makes 3 large loaves, 114 pounds each. WHOLE WHEAT BREAD (Basic Recipe) Temperature: 400°F.-375°F. Time: 50-60 minutes 2 cakes compressed yeast 4 tablespoons molasses or corn \4 cup lukewarm water syrup 1 teaspoon white sugar 1 tablespoon salt 1 cup milk 3 cups whole wheat flour 1 cup water 2 cups sifted all-purpose flour 1g cup shortening 1 tablespoon grated orange rind Crumble the yeast cakes in the lukewarm water; add the sugar and stir well. Scald the milk; add the water, shortening, molasses or corn syrup and salt; cool to lukewarm. Combine with the yeast mixture. Add the flour, cup by cup, until the mixture can be turned out on a floured board. Sprinkle with the orange rind; knead until smooth. Place in an oiled bowl; brush with oil; cover and let rise in a warm place until double in bulk (about 114 hours). Turn on a floured board and knead just enough to release the gas bubbles. Cut in half and roll each half into a ball. Cover and let stand 10 minutes. Shape each half into a loaf; place in an oiled pan 9” x 5" x3”. Let rise till light (about 40 min- utes). Bake in a hot oven (400°F.) for 15 minutes; reduce the heat to 375°F.; continue cooking till done (about 35 minutes). If you want a soft crust and no crumbling, brush the loaves with fat just before removing from the oven. Yield: two 2 pound loaves.
