Bake in gem tins in moderate oven (350 degrees) for 20 minutes. This makes 12 gems. CRANBERRY MUFFINS Cream 1% cup shortening with Y%4 cup sugar. To this add 1 beaten egg. Sift 2 cups flour and 3 teaspoons baking powder, and add this mixture alternately with 1 cup milk to first mixture. Just before putting muffin batter into greased pans, add 1 cup cranberries which have been washed, dried and covered with 2 tablespoons sugar. Bake in moderate oven (350 degrees) for 20 to 30 minutes. If cranberries are very large, chop coarsely. PROVIDENCE MUFFINS Mix 2 cup graham flour, Y2 cup bran, Y2 teaspoon salt, 2 teaspoons sugar, 2 teaspoons baking powder. Melt 1 teaspoon butter and 1 tablespoon peanut butter together, add to dry mixture. Add 1 egg well beaten, add half cup milk; beat well. gin in hot greased muffin pan at 400 degrees for about 12 minutes. Makes 6 to muffins. BOSTON BROWN BREAD 2 cups whole wheat flour Y2 cup sugar 1 cup corn meal 1% cups buttermilk 1 teaspoon salt 2 level teaspoons soda Ya cup dark molasses Steam in 4 baking powder tins. QUICK COFFEE CAKE Ya cup sugar Yq cup milk 1 cup flour 1 teaspoon baking powder Ya cube butter Salt 1 egg Take Y2 cup sugar, Y2 cup flour, ¥2 cube butter and mix slightly. Add egg, milk, rest of flour, with baking powder and salt. Mix well. TOPPING: Two tablespoons each of flour, sugar, and butter mixed together, and flavored with cinnamon. Spread over cake and bake in moderate oven. SPOON BREAD 1 pint sweet milk 34 cup corn meal 3 eggs Y2 teaspoon salt Butter size of an egg Scald the milk and stir in corn meal. Cook until thick, add butter and salt. Let cool and then add egg yolks well beaten. Lastly add well beaten egg whites. Put in well buttered baking dish. Bake in pan of hot water 35 minutes at 350 degrees. HOT ROLLS Drop 1 tablespoon butter in 2/3 cup hot milk then allow to cool. Dissolve 1 cake of yeast in Y2 cup lukewarm water to which 1 teaspoon sugar has been added. To 1 cup flour add 3 tablespoons sugar and 1 teaspoon salt. Beat 2 eggs well, add to milk and butter, then add yeast and mix with flour mixture. Add 2 cups flour, stir in, but do not knead. Cover and let stand for 2 hours or more. Make half of dough into Parker House rolls, and let rise for 1 hour. Bake at 400 degrees for 15 minutes. Make cinnamon rolls of remaining dough, let rise, and bake as above.
