Cream butter, gradually add brown sugar and cream well. Add egg, vanilla and beat well. Mix flour, salt, baking soda. Stir into batter. Use dough as is, or add any variation desired, i.e. Orange—Add % tbsp. orange rind. Chocolate — 1 square melted unsweetened chocolate and 4 tbsps. chopped nuts. Lemon Coconut—add 1 teasp. lemon extract and 2 tbsp. shredded coconut. Almond—Add % teasp. almond extract. Before baking top each cookie with blanched almond. Shape finished dough into long rolls about 2” in diameter. Cover with wax paper and chill until hard (about 1-2 hours). Slice thinly, place on ungreased cookie sheet. Bake at 350° for 8-10 minutes.
