ADA’S LEMON PIE i 1 egg yolk 1 cup sugar 1tbsp. flour 1 tbsp. melted butter Grated rind of 1 lemon 2 tbsps. lemon juice % cup hot water Mix. Fold in stiffly beaten egg whites. Fill pastry and cover with pastry. LEMON CAKE PIE 1 cup white sugar 2 tbsp. flour 2 tbsp. melted butter 2 egg yolks 1 cup milk Juice and rind of 1 lemon Cream eggs, butter, sugar and flour. Add milk and lemon. Beat whites stiff and add last. Bake in an uncooked pie shell. RHUBARB PIE 2 cups rhubarb 1 cup sugar J 2 tbsp. butter 2 tbsp. flour 1 tsp. lemon juice 1 egg NEW YEAR’S EGGNOG PIE 4 egg yolks slightly beaten 1 tbsp. plain gelatin J 14 tsp. salt 14 cup sugar he . 1% cup sugar 4 egg whites stiffly beaten | 1% cup cold water 1 tsp. nutmeg 2 tsp. rum or rum flavoring Cook first four ingredients over boiling water, constantly stirring until mixture coats a spoon. Soak gelatine in the cold water for 5 min- utes. Pour custard over gelatine, blend well and cool. When mixture starts to congeal, fold in egg whites, blended with sugar, nutmeg and rum. Pour mixture into a baked pie shell and chill until firm. If de- _ sired, spread with thin layer of whipped cream and sprinkle with nutmeg. This will take a 9-inch pie shell. MRS. H. M. SMEALL. 30
