WICKIE. q MOLDED SHRIMP WITH CUCUMBER SAUCE 4 2 cups broken shrimps or lobster % tsp. salt q 1% tbsp. sugar 1 cup celery r % cup peas 2 egg yolks ) 114 tbsp. melted butter 34 cup milk q 4 cup vinegar 1 tbsp. gelatin a 2 tbsp. cold water Few grains cayenne ii Mix together dry ingredients, add egg yolks, butter, milk and vinegar. 4 Cook slowly, stirring constantly until mixture thickens. Soften gelatin in cold water and add to hot dressing. Stir mixture in order to blend gelatin thoroughly. Cool dressing, fold in shrimp, peas and finely i chopped celery. Pour into fish mold or individual molds. Serve on bed . of watercress and garnish with cucumber sauce. LEFTOVER MEATS SHEPHERD’S PIE | a !
