nstias POULTRY AND GAME 117 CHICKEN PIE Boil a fowl until very tender. Add salt after it has been cooking over an hour. Let stand until grease forms on top. Skim off grease. Pick all chicken off the bones. Mix grease with flour and thicken gravy. Pour over the chicken in casserole or other container. Make your own biscuits, add more shortening. Have the chicken boiling in the gravy and put in biscuits. Bake Y2 hour at 400 degrees. BARBECUED CHICKEN 2 fryers 8 servings Cut fryers in half then quarters so each fryer makes 4 pieces. Place quarters on broiler pan and brush with melted butter. Broil and baste until brown on both sides. Place in roaster with rack in bottom of pan. Add water to cover bottom of pan to keep from burning. Barbecue Sauce Heat 1 bottle barbecue sauce 2 tablespoons worcestershire 1 cup vinegar sauce Baste chicken with barbecue sauce and roast for 2 hours. Roast at 300 degrees. BREAST OF CHICKEN SHERRY Two breasts of broiling chicken, salted and with a few grains of cayenne pepper added. Put 1 tablespoon butter in frying pan over a hot fire. When melted and quite hot and clear add breasts of chicken. When chicken begins to brown turn over and put lid on pan and place in moderate oven (350 degrees), adding a little more butter if necessary. Let cook about 25 minutes, then add Y2 cup raw mushrooms diced, Y cup white grapes cut lengthwise and seeded. Now add 3 tablespoons sherry or Madeira wine. Cook sauce a little more and add 1 cup of rich cream. Let simmer 5 minutes. Serve on toast. Allow 1 breast per serving and increase sauce accordingly.
