BRAN MUFFINS 1% cups flour Y% teasp. salt 1% cups bran 1 egg 2 teasp. baking powder % cup melted margarine 1% teasp. baking soda 34 cup raisins 1 cup sour milk 1% cup brown sugar Sift baking soda, baking powder, salt and flour together and add to bran. Beat eggs and milk together, add melted margarine and sugar and add this to flour. Add raisins and mix well. Bake in greased muffin tins at 375° for approximately 30 mins. EK. Degen (1944). DELIGHTS % cup butter 2 teasp. baking powder 34 cup sugar 1% teasp. salt 2 eggs, unbeaten 1 teasp. vanilla 2 cups sifted cake flour jam Oven 375°. Grease small muffin tins. Cream butter, sugar and vanilla. Add eggs, one at a time, beating well after each. Sift flour, salt and baking powder. Add dry ingredients to creamed mixture, blending well. Chill. Form dough into small balls and with fingers pat into muffin tins. Fill center of each with 1 teasp. jam. Bake 12 to 15 mins. until lightly browned only. Margaret Lemoine (Cummings 52A). RAISIN CUPCAKES 14% cups seedless raisins 1% cups sifted flour 2/3 cups liquid (saved from 2 teasp. baking powder simmering raisins) 1 teasp. cinnamon % cup soft shortening 1% teasp. cloves 34 cup sugar 1% teasp. salt 1 egg Cover raisins with water in a small saucepan. Bring to a boil and simmer 20 minutes. Drain well, saving 2/3 cup of liquid. Cool. Heat oven to 400°. Put paper baking cups in 16 large muffin cups. Cream shortening, sugar and egg. Sift flour, baking powder, cinna- mon, cloves and salt together, and stir into creamed mixture alter- nately with raisin liquid. Fold in raisins. Spoon into muffin cups. Bake 12 to 15 minutes or until top springs back when touched lightly in center. Ice with butter icing. Margaret Lemoine (Cummings 52A). ORANGE UPSIDAISIES %4 cup orange juice 1/3 cup butter or margarine 1 teasp. grated orange rind lf teasp. salt % cup sugar Combine above ingredients in sauce pan and simmer over low heat for 10 minutes. Divide into well greased muffin tins. Fill almost half full. 2 cups flour 1/3 cup salad oil 3 teasp. baking powder 34 cup milk 1 teasp. salt Add oil and milk to dry ingredients and blend well. Roll out on floured bread board to a 13 x 10 rectangle. 8
