STEAMED CRAB IN BLACK BEAN SAUCE Black Bean Sauce (Chinese style) Soya Sauce Garlic Cloves Smash garlic cloves and mix with soya sauce and black beans into a bowl. Set aside. Crack crabs into small sections, 3". Put into a shallow pan under high heat. Cook for approximately 2 minutes, pour in the mixture of sauce and cook additional 5 minutes. Serve right away. ROAST HALIBUT Thick slice Halibut (about 23 pounds) Freshly ground pepper 2 tablespoons melted butter 1 cup cream, sweet or sour 2 tablespoons fish stock - OR 1 tablespoon chopped shallots 2 tablespoons fumet (or scallions) Salt 1 tablespoon chopped parsley Wipe the steak with a paper towel, and spread butter on both sides, then place in a shallow baking dish. Moisten with fumet or a good fish stock (see index), and season to taste with salt and pepper. Preheat oven to 375 , and bake for 15 minutes. Remove the skin and center bone, then add the chopped shallots and cream. Then cook for a further 15 minutes. Use the parsley for garnish, and serve in the baking dish. (6 servings). Alternate steaks: Lingcod, Cod, Muskellunge or Swordfish. FRIED HALIBUT Heat 1/8" fat in a heavy skillet - season fish with salt and pepper and cook gently until fish is tender. DEVILLED HALIBUT STEAKS 4 Pacific Halibut Steaks 2 tablespoons chili sauce 2 tablespoons prepared mustard 2 tablespoons horseradish 1 tablespoon vegetable oil 1 package Spanish fried rice mix Mix together mustard, oil, sauce, and horseradish. Spread half on steaks. Place on greased broiler rack and broil 6 minutes. Turn fish and spread with remaining sauce. Continue broiling for another 6 minutes. Prepare rice following package directions. Serve Halibut Steaks on hot rice. (4 servings). (If using frozen halibut, you may prefer to thaw it first for easier handling - if you wish to use in frozen form, simply double the length of cooking time). 4
