BAKED ICE CREAM—No. 54

This dessert (Baked Alaska), never fails to be interesting because of its
apparent contradictions.

For a single large Alaska, place a flat layer of sponge cake on a wet
board. On this, place a brick of confectioners’ ice cream or one made in the
freezing tray of your mechanical refrigerator; the sponge cake should be a
little longer and wider than the ice cream brick.

Have ready a meringue—for a quart brick you will need 4 egg whites,
beaten stiff with one-half cup fine sugar beaten in gradually and one-half
teaspoon vanilla to flavour. Spread this meringue all over the ice cream,
enclosing it completely. Place at once in very hot oven or under broiler
and brown meringue delicately; (this quick browning is unusual for merin-
gue, but necessary here).

Slide the Alaska onto a serving dish at once and serve quickly.

Individual Alaskas are charming—use slices of sponge cake or the
shallow layer shaped with a large cutter. Put a serving of ice cream on
each and finish as usual. In anticipation of serving, a small paper doiley
may rest under the sponge cake—easy to slip off onto serving plates.

Juices of berries and other fresh fruits may be combined with this punch.
Gingerale, iced tea, pineapple syrup, grape juice, may all be combined with |
this citrus-fruit foundation.

(For 30 Large or 60 Small Glasses)

4 cups white sugar

Combine cooled tea and syrup.

1 pint lemon juice

1 pint grape juice

5 quarts ice water

1 large can crushed pineapple

Sliced berries, in season, cherries,etc.

If punch is to be poured over large block of j ice to chill it, less ice water.
