SALADS 145 SPICED BEET SALAD 1 pkg. lemon jello Yq teaspoon cloves 1% cup boiling water 1 cup diced cooked beets Y% cup vinegar Y2 cup diced celery V4 cup sugar V4 cup sweet pickles Y2 teaspoon cinnamon Yq cup chopped green pepper Yq teaspoon salt 1 tablespoon grated horseradish Dissolve jello in water, add vinegar, sugar, salt and spices. When partly set add other ingredients. Put in small moulds. Serve on lettuce with mayonnaise. DEVILLED EGGS FOR ST. PATRICK’S Hard-boil eggs (as many as wanted). Cut crosswise so they look like a pipe bowl. Mash yolks with butter, salt and pepper, a little prepared mustard and salad dressing. Put into egg whites. Sprinkle with chopped parsley. Boil a few long sticks of macaroni. Cut into lengths to make pipe stems. Stick into devilled eggs. (Makes a garnish for salad). PICKLED EGGS (Garnish for Salads) Hard-boil 6 eggs. Peel while warm and press ends in to flatten. Let stand in pickled beet juice until real red. Stick cloves in each flattened end. One with the blossom out and other in so it looks like an apple. When ready to serve, stick a small plant leaf in the stem end. COTTAGE CHEESE AND VEGETABLE SALAD Crisp lettuce leaves Y2 teaspoon grated onion 2 tomatoes Y teaspoon salt 1% cups cottage cheese Dash paprika Line salad bowl! with lettuce. Peel tomatoes, cut in wedges and place around edge of bowl. Mix cheese with onion, salt and paprika. Pile in centre of bowl. Serves 4. FROZEN FRUIT SALAD 1 Ib. cream cheese 1% cups miniature marshmallows 1 can (212) fruit cocktail Few drops red food coloring 2/3 cup ground walnuts or pecans Have cheese at room temperature. Cream thoroughly. Drain fruit, add nuts and marshmallows; blend well. Add food coloring and blend again. Spoon into ice tray and freeze. Remove from freezer 30 minutes before serving. Cut into squares and serve on lettuce. AVOCADO SALAD 1 pkg. lime jello Y4 teaspoon salt Y cup hot water Y2 cup chopped pecans 1 cup crushed pineapple 1 avocado, diced : and juice Ya cup cream, whipped Ya cup mayonnaise Melt lime jello in hot water. Add all other ingredients and chill till thick.
