90 KATE AITKEN’S CANADIAN COOK BOOK PICKLED WATERMELON RIND 114 quarts watermelon rind, 1 cup cider vinegar diced 2 tablespoons mixed pickling 3 tablespoons salt spice 3 quarts water 3-3” sticks cinnamon 4 cups brown sugar After the pink flesh is cut off and used, peel off the green skin from the rind. Dice and measure—you should have 1!%4 quarts. Soak overnight in a mixture of | quart of water and the salt. In the morning, drain and rinse; cover with 1 quart cold water and simmer till tender; drain till no moisture remains. Make a syrup of the remaining | quart of water, the sugar and vinegar. Add the spices, tied loosely in a bag; simmer 5 minutes. We use the mini- mum of syrup in the recipe to save the sugar, so add only half the watermelon cubes to the syrup. Simmer, tightly covered, till clear (about 45 minutes). Remove from the syrup, place in sterile jars and add the remaining half of the raw cubes to the syrup. Again, cook till transparent and place in sterile jars. There should be enough syrup left to fill jars. Seal at once. Yield: 3 pint jars. CHILI FRUIT RELISH 24 large ripe tomatoes 2 green peppers (sweet) 6 peaches Y% cup whole pickling spice 6 pears (tied in a bag) 6 apples 2 tablespoons salt 6 onions 3 cups white sugar 2 red peppers (sweet) 4 cups cider vinegar Scald and skin the tomatoes; cut in pieces; put in a large pre- serving kettle. Scald, skin and dice the peaches; peel, core and dice the pears and apples. Peel and finely chop the onions; seed and dice the peppers. Add all the fruits and vegetables to the tomatoes; mix well. Add the spices tied loosely in a bag, the salt, sugar and vinegar. Let stand for 2 hours before boiling; simmer gently till thick (about 2 hours). Yield: approximately 8 pints.
