CUCUMBER CHEESE MOLD 1 tablespoon gelatin’ 1 teaspoon salt 1/3 cup cold water 2 teaspoons vinegar 1 1/2 cups cottage cheese OR 1/2 teaspoon Worcestershire 1 1/2 cups coarsely chopped cucumber and dash of pepper sauce 1 teaspoon finely chopped onion 1/2 cup mayonnaise or salad dressing Soak gelatin in cold water for 5 minutes, dissolve over hot water. Mix cottage cheese, cucumber, onion, salt, vinegar OR Worcestershire and pepper sauce. Stir dissolved gelatin into dressing, combine with other ingredients. Pour into a mold and chill until firm. 6 servings. STRAWBERRY COTTAGE CHEESE SALAD 1 tablespoon gelatin 1/2 cup salad dressing 1/3 cup cold water 2 cups cottage cheese 2 teaspoons sugar 2 cups quartered strawberries Soak gelatin in cold water for 5 minutes, dissolve over hot water. Add sugar and stir until dissolved. Blend in the salad dressing and gradu- ally stir in cottage cheese, mixing well. Fold strawberries into cottage cheese mixture, then turn into one large mold or individual molds and chill until set, about 1 hour. Makes about 4 cups. COTTAGE FRUIT SALAD 1 1/2 tablespoons gelatin 3 cloves 1/4 cup cold water Few drops green coloring 1 cup syrup from canned pears . 1 4-ounce package cream cheese 1/2 cup cold water 3 tablespoons mayonnaise or salad dressing 3 tablespoons vinegar 1 cup diced, canned pears 2 cups diced, unpeeled apple Soak gelatin in cold water for 5 minutes. Bring pear syrup, water, vinegar, and cloves to boiling point. Boil for 2 minutes and remove the cloves. Add the soaked gelatin and stir until dissolved. Add green color- ing. Chill until partially set. Blend cream cheese and dressing together. Add to partially set gelatin mixture and beat until light. Fold in pears and apples. Turn into mold and chill until firm. Unmold on crisp lettuce leaves. 6 servings.
