Soups One morning in the garden bed The Onions and the Carrots said Unto the Parsley groups, “Oh! where shall we three meet again, In thunder, lightning, hail or rain?” “Alas,” replied, in tones of pain, CLAM CHOWDER 5 slices chopped bacon 2 cups sliced potatoes 1 cup chopped onions 1 small tin chopped clams 14 cup rolled cracker Brown the bacon in frying pan; add the potatoes and onions. Cover with water and boil until tender. Then add 1 small tin chopped clams and the crackers. Sea- son and serve hot. —LENA PECK CLAM CHOWDER 1 cup diced potatoes 1 chopped onion 1 can clams 2 cups water 2 cups milk Salt and pepper 1 cup hot tomatoes, add pinch soda Cook the potatoes and onion in the liquid from the clams to which 2 cups of water have been added. When cooked add the clams and milk and seasoning. Lastly add 1 cup hot tomatoes to which has been added a pinch of soda. (Onion may be partly cooked with two slices of diced bacon if desired). —VERA STOREY CREAM OF TOMATO SOUP 1 large tin tomatoes 14 tins water 8 cloves 1 small onion Boil all together 4% hour; then strain and add: 3 tablespoons butter, heaping, melted 3 tablespoons flour Y4 teaspoon baking soda 1 cup milk Pour above mixture into soup and boil 20 to 30 minutes. Watch closely as it will boil over easily. —DELL ROBERTS (5) The Parsley, “In the soup.” GREEN PEA SOUP 1 slice white bread 1 quart hot water 1 tablespoon butter 2 cups fresh green peas Soak the bread in cold water. Add hot water, butter and peas, and boil until peas are nearly done. Put lettuce leaves, parsley and chives through meat chopper until you have % cup. Mix with 1 tablespoon flour, 1 tablespoon sugar and 1 teaspoon salt. Add to soup and boil a few minutes longer. —LENA PECK ITALIAN TOMATO SOUP 1 can tomatoes 1 bay leaf 1 tablespoon brown sugar Pinch of cloves 1 teaspoon salt teaspoon soda 1 tablespoon chopped onion 1 quart water Simmer all 15 minutes. Strain. Mix 2 tablespoons flour and 2 tablespoons but- ter. Add slowly to strained tomatoes and bring to boil. Before serving add 2 or 3 teaspoons Bovril or 3 Oxo cubes. —MILpDRED L. MILLER WHITE SAUCE FOR SOUPS 2 cups scalded milk Y% teaspoon pepper lg teaspoon salt 3 tablespoons butter 4 tablespoons flour Melt butter, add flour, salt and pepper. Mix to a smooth paste; add scalded milk, stirring, and cook on low heat until thick. Use at once, or place in covered jar in refrigerator for future use.
