FRESHWATER DELICACIES @anada’s inland waters abound in fish that provide delicacies for all Canadians. The freshwater fisheries extend from Great Slave Lake to the St. Lawrence River. About ninety per cent of the total production is exported. Many species of freshwater fish are prized by both sportsmen and commercial fishermen. The most important commercially are the lake trout, smelt, whitefish, yellow pickerel or doré, pike and perch. Other species that we often see in the stores are Winnipeg goldeye, sturgeon, tommy cod, eels, shad, alewives, Atlantic salmon and eulachon. Many of these fish are seasonal and found only in certain regions. For instance, we find eulachon in western Canada and tommy cod in eastern Canada. When you buy fish, look for the inspection symbol that guaran- tees that the fish is of good quality and has been processed in government approved plants. Frozen fish may be _ labelled “Canada Inspected” and fresh fish are labelled “Processed Under Government Supervision”. The words appear within a line draw- ing of a maple leaf, as shown here.
