PRIZE GINGERBREAD 1% cup butter 1 cup brown sugar 1%4 cup molasses 2 cups flour 24 cup boiling water 2 eggs 1% teaspoon each: salt cinnamon nutmeg ginger 1 teaspoon baking powder 1 teaspoon soda Cream butter and sugar, add molasses, salt, nutmeg and cinnamon. Pour boil- ing water over soda and add to first mixture. Add flour which has been sifted with baking powder and ginger. Add well beaten eggs, and beat till smooth. Bake 40 minutes at 325 to 350 degrees in 9” x12” tin which has been lined with waxed paper. Delicious served hot with whipped cream, or just plain with icing sugar dusted over it. —ALLIE Morr MADEIRA CAKE DELUXE 3 cups sifted all-purpose flour 2 tsps. baking powder 1 tsp. salt 1 cup butter 2 cups granulated sugar 5 eggs 1 tsp. vanilla 14 tsp. almond flavouring 1 cup milk Sift dry ingredients. Cream butter and add sugar. Beat until light. Add eggs, one at a time, beating well. Add fla- vourings. Beat in flour and milk alter- nately (three or four additions) ending with flour. Beat only until combined. Grease and flour 8’ x 5’ loaf pan or 9” or 10” tube pan. Bake at 350° F for 60 or 70 minutes. When cake is baked, allow it to cool 15 minutes.
