ROLLED SANDWICHES

Remove crusts from very fresh loaf of sandwich bread. Cut long slices of bread
with a hot knife, spread with butter and a mixture of celery, green and red peppers
and salad dressing. Roll like a jelly roll. Cut across in half-inch slices.

CHEESE AND TUNA SANDWICH

1 cup American cheese, chopped 2 tablespoons onion, chopped
3 hard-cooked eggs 2 tablespoons olives, chopped
1 can (7 oz.) tuna 2 tablespoons sweet pickles,
2 tablespoons green pepper, chopped

chopped Y2 cup mayonnaise

Mix all of the ingredients and spread on large buns. Wrap in foil, pierced for
steam, and bake 30 minutes at 250 degrees.

TEA SANDWICH FILLING SUGGESTIONS

Finely chopped watercress or tender young spinach leaves moistened with mayonnaise.
Thin slices of cucumber cut to fit rounds of bread and moistened with salad dressing.
Ground dried prunes and nuts moistened with honey.

Well creamed butter with anchovy paste, mashed sardines, bits of crabmeat or lobster,
chopped green pepper or pimento, or horseradish.

Thin slices of nut bread with butter and grated orange or lemon rind in thin mayonnaise.
Rye bread cut in thin strips and spread with various cheeses.

Mashed sardines and cooked egg yolk blended with olive oil.

Chopped olives and nuts mixed with mayonnaise.

Grated raw carrots with finely chopped roasted peanuts moistened with salad dressing.
Raisins and nuts ground together and moistened with honey.

Peanut butter and currant jelly blended together.

Hardboiled egg yolks mashed and blended with prepared mustard aad mayonnaise.

Slices of dried beef spread with cream cheese, rolled up, and flattened to fit finger slices
of dark or white bread.

Chopped mushrooms browned in butter and spread on toast fingers.

Ground boiled tongue mixed with chopped stuffed olives and mustard for rye bread
sandwiches.

Cottage cheese seasoned with minced clams and onion juice.
Ground corned beef, pickle relish, and hardboiled egg mashed with salad dressing.
