FAVOURITE MEAT LOAF Ready to serve unexpected company in haif an hour 1 lb. ground beef % cup milk 1% Ib. ground pork © 1 tsp. salt 34 cup rolled oats 1% tsp. pepper 1 egg 2 slices side bacon % cup minced onion | Partially fry bacon. Mix remaining ingredients well in large bowl. Lay strips of bacon on bottom of small deep loaf pan. Pile meat over; pat to level. Bake at 350° for 45 minutes. To freeze: Cool quickly. Wrap in moisture-vapor-proof material. Freeze immediately. To Serve: Return to loaf pan; cover loosely with foil. Bake at 350° for 15-20 minutes. Or, allow to thaw wrapped in refrigerator; serve cold sliced or in sandwiches. TOMATO SAUCE For easy preparation make in quantity and freeze 2 c. canned tematoes _ 4 whole cloves - 1% ¢. chopped onion 14 tsp. pepper or 1 bay leaf 2 peppercorns 1 tbsp. sugar 14 tsp. mustard Vy tsp. salt - 3 Place all ingredients in saucepan; bring to boil. Simmer 20-30 minutes, covered. Mash through sieve. To freeze: Cool quickly by setting bowl in ice water. Pour into con- tainers, leaving headspace, seal and freeze immediately. To Serve: Fry meatballs while spaghetti cooks. Pour off all but 3 tbsp. fat from pan. Add 3 tbsp. flour. Blend. Add frozen sauce. Cook until done (5 minutes). Add water if necessary.
