SALAD DRESSINGS Basic salad dressings such as mayonnaise, cooked salad dressing and French dressings may be bought or made at home. THOUSAND ISLAND DRESSING 1 cup mayonnaise 1 tablespoon minced onion 2 tablespoons chili sauce OR chopped chives 2 tablespoons minced stuffed olives 1/4 to 1/2 cup heavy cream, whipped or 1 tablespoon chopped green pepper plain Blend all ingredients thoroughly. Makes about 2 1/2 cups. RUSSIAN DRESSING 1 cup mayonnaise 1/2 teaspoon grated onion 2 tablespoons chili sauce 1 tablespoon finely minced green 1 teaspoon spicy meat sauce pepper (optional ) Combine all ingredients and beat well. Serve on vegetable salads. Makes 1 cup. FRUIT SALAD DRESSING 3 tablespoons sugar Grated rind of one lemon 3 tablespoons flour 3/4 cup syrup from canned fruit Few grains salt 1 egg 2 tablespoons cider vinegar 1/4 to 1/2 cup mayonnaise 2 tablespoons lemon juice 1 cup whipping cream Mix sugar, flour and salt in top of double boiler. Add vinegar, lemon juice and rind, syrup and slightly beaten egg. Blend well. Cook over hot water, stirring constantly, until thickened and continue cooking about 5 minutes. Chill. Just before serving, whip cream and fold with mayon- naise into cooked mixture. Makes about 2 3/4 cups—12 generous servings for fruit salad. CREAM SALAD DRESSING 1/2 teaspoon salt 1 teaspoon cornstarch 3/4 teaspoon dry mustard 2 egg yolks 2 tablespoons sugar 3/4 cup light cream 1/4 cup vinegar Mix salt, mustard, sugar and cornstarch in top of double boiler. Blend in egg yolks. Add cream, place over hot water and cook slowly adding vinegar gradually. Stir until thickened. Cool and serve on cabbage or other salad. Makes about 1 cup. 18
