Add orange and lime juice gradually, stirring until ™ blended and smooth. Cook over moderate heat until thickened. Remove from heat. Add mixture gradually to egg yolk, stirring constantly. Return mixture to heat and thicken. Remove from heat and stir in orange and lime rind. Cool, stirring occasionally. Combine egg white and 1 tbsp. sugar and beat until | stiff peaks form. Fold gently into orange mixture. ™ Put crumb mixture into bowls, cover with pudding and garnish with orange sections and perhaps some reserved crumbs. Chill and serve. Yield: 4 generous servings. Miss Corry de Winter PINEAPPLE UPSIDE DOWN CAKE 1 recipe white cake batter or cake mix V4 cup butter 1 cup brown sugar q 1 can pineapple rings Make up cake batter. Melt butter in 9" square cake pan, add brown sugar and mix. Place drained pineapple rings fairly close together on sugar. Pour in cake batter. Bake at 350° 40 — 50 minutes or until cake is done. Allow to cool 15 minutes. Invert cake onto plate. Serve warm or cold with ™™ whipped cream or ice cream. Yield: 9 servings. Note: Peach halves may be substituted for pine- apple rings.
